Back to School Rice Krispie Squares

Soon the kids will be going back to school and it'll be time to start packing lunch boxes everyday. We thought we would help you out and give you a few ideas of some healthy treats to pack which your kids will love. The first are some Rice Krispie Squares which are so simple to make. Get the kids to measure out the ingredients using a cup to keep it simple and then get them to do the mixing. If they get to help make them they'll be even more excited to eat them. IMG_7375-1 IMG_7381 Ingredients (makes x8 large) 2 cups rice Krispies 1/2 cup crunchy peanut butter 1/2 cup maple syrup 40g dark chocolate Method Place the rice Krispies in a large bowl. Put the maple syrup and peanut butter into a sauce pan and heat until the peanut butter has melted, stirring occasionally. Pour this onto the rice Krispies and mix until everything is combined. Line a small baking dish with grease proof paper and press the mixture evenly into the dish. Place in the fridge until set (at least 30 minutes). IMG_7376-2 Once set, melt the chocolate in the microwave in 30 second blasts, mixing well in-between. Drizzle this over the squares either using a piping bag or a teaspoon and leave to set. Cut into squares with a sharp knife. Keep in the fridge in an air-tight container. IMG_7378 These can easily be adapted to suit your kids favourite foods. If they love dried apricots or sultanas, hope them up and add them when combining all the ingredients. You could add sprinkles to the top to make them look even more appealing.
