Who knew there is a day dedicated to the wonderful blueberry muffin? We were overjoyed to find this out at Bakes HQ as it meant we had the perfect excuse to whip up a batch. Blueberries are full of goodness and they have many benefits to our health. I'm not sure if this still counts when they are inside a spongy muffin however! This recipe is super simple and takes about 10 minutes to make and then 20 minutes to cook. They are so moorish we've just had 2 each! Ingredients (makes x12) 100g butter 100g golden caster sugar 2 eggs 300g self-raising flour 1tsp vanilla extract 140ml milk 1tsp baking powder 150g blueberries 2tbsp golden caster sugar 75g icing sugar Method Preheat the oven to 180C and line a muffin tray with paper muffin cases. Cream the butter and sugar until fluffy with an electric hand whisk and then add the eggs, flour, vanilla, milk and baking powder. Stir in the blueberries and spoon the mixture into the muffin cases. Sprinkle over the remaining sugar. Bake for 20 minutes until risen and golden. Leave to cool for 10 minutes in the tray before placing on a cooling rack.
