Scones, a classic summer-time treat. We thought they would be a perfect bake for Afternoon Tea Week for either you or the kids to make. Rather then the traditional fruit scones, we've opted for savoury and filled ours with cheese! What could be better then a warm cheese scone out the oven lathered in butter? Ingredients (makes x8) 225g self raising flour, plus a little extra for dusting 1/2 teaspoon bicarbonate of soda 55g butter 40g cheddar cheese 150ml milk, plus a little extra for brushing Method Preheat the oven to 220C/200C fan and line a baking tray with greaseproof paper. In a large bowl, mix the flour and bicarbonate of soda together before rubbing in the butter with your fingers until no big lumps are left. Grate the cheese and stir this in and pour in the milk. Use a wooden spoon to mix the dough before turning it out onto a floured work top. Knead for a few seconds and the press the dough down until 2cm in thickness. Use a large scone cutter to stamp out the scones and place them onto the baking tray. Collect the left over dough and squash down and cut out until there is none left. Brush a little milk on the tops of the scones and then bake for 15-18minutes until risen and golden. Leave to cool slightly on the tray before enjoying! Why not try using a different type of cheese to get a stronger flavour? You could spread caramelised onion chutney onto your scones to complement the cheese!
