This months Junior Bakes Box is a recipe to make a giant scone! We thought that this would be a perfect bake to enjoy in the sunshine at a tea party with friends. After mastering the giant scone, we thought you could get the kids to try and make individual scones with dark chocolate and cherries. They can use a scone cutter or any small shaped cutter you have going spare. Dark chocolate and cherry is a classic flavour combination and we think these would be best served with a big dollop of whipped cream! Ingredients 225g self-raising flour 40g golden caster sugar 75g butter 75g glacier cherries 25g dark chocolate 1 large egg, beaten x2 tablespoons milk to mix, a little more to brush the top a little extra flour Method Preheat the oven to 200 degrees. Sift the flour into a bowl and then stir in the sugar. Rub the butter into the dry ingredients using your fingers until the mixture looks crumbly. Carefully chop the chocolate and sprinkle this into the mix. Wash the cherries and chop them up. Sprinkle a little flour on them to dry them before stirring them into the mixture. Beat the egg and 2 tbsp of milk together and pour this into the mixture. Start to mix to the dough with a knife, then bring the mixture together using your hands – it should be a soft but not a sticky dough. Turn the dough out onto a lightly floured work surface and knead for a few seconds. Roll the dough until about 2cm thick and use a small scone cutter to cut out rounds. Re-roll the trimmings until all the dough is used up, you should make about 15. Place onto a lined baking tray and brush with a little milk. Place in the oven for 15 minutes or until the scones are risen and golden. Place on a cooling rack and serve with butter, jam or cream. This is another recipe out of our School Holiday Baking series!
