Funfetti Strawberry PancakesAug 17, 2016
Funfetti is a trend thats buzzing around everywhere at the moment. It basically means adding sprinkles to whatever your baking. We've seen funfetti cakes, cookies, ice-cream, macaroons and even waffles. We decided to get the sprinkles out and add them to American pancakes along with slices of strawberries. This is a perfect Sunday brunch recipe which the kids can help make. Ingredients (makes x6 pancakes) 135g self raising flour 1/2 teaspoon bicarbonate of soda 3 tablespoons sugar 140ml milk 1 egg 30g butter, melted then left to cool a little (plus extra for cooking) 6 strawberries, sliced into 3 6 teaspoons sprinkles Method Sift the flour and bicarb into a large bowl and stir in the sugar. Beat the milk and egg together in a jug and pour in the melted butter and mix. Pour the liquids into the flour mixture and mix with an electric hand whisk until smooth and bubbly. Place a little butter in a frying pan and melt over a medium heat. Pour half a ladle of batter into the pan and sprinkle over a teaspoon of sprinkles. Add 3 slices of strawberries and leave to cook until the batter starts to bubble. Use a pallet knife to slide the pancake on to a baking tray. Repeat with the rest of the batter and once all the pancakes are on the baking tray place them under the grill to finish cooking the tops. Serve sprinkles side up with more fresh strawberries. Why not make some chocolate ganache to go over your pancakes! Just heat 50g of double cream until simmering and pour this over 50g of dark chocolate. Stir until smooth and pour over your stack!
