Giant Cookie

Here at Bakes HQ we've been trying out some new recipes and we couldn't wait to share this one with you all. This is a giant cookie filled with chocolate chips and Oreo pieces. You can slice it up after and serve it with some ice-cream or even keep it all for yourself. The recipe is really easy and the result is great, so why not have a go yourself? Processed with VSCO with 5 preset Ingredients 250g plain flour 1 teaspoon bicarbonate of soda 170g unsalted butter, softened 100g granulated sugar 75g light-brown sugar 1 large egg 2 teaspoons pure vanilla extract 100g chocolate chips x4 Oreos, chopped into quarters 50g chocolate chips   Method Preheat oven to 180 degrees. In a large bowl, cream together the butter and sugars until mixture is light and fluffy (about 2 minutes). Add egg and vanilla and mix until they are fully incorporated. Add the flour and bicarb and beat until just combined. Stir in 100g of chocolate chips. Line a round cake tin with greaseproof paper and pour in the cookie batter. Push down to evenly cover the tin and poke in the Oreo quarters. Bake for 45-50 minutes, until the edges are brown and top is golden. You may need to cover the cookie in tinfoil after 30 minutes if the top is golden but the batter is still not cooked. Once cooked, leave to cool in the tin for 10 minutes before transferring to a wire rack. Melt the remaining chocolate chips in a glass bowl over a pan of just simmering water, being careful not to let the water touch the bottom of the bowl.
