Its one of our favourite times of the year...halloween!! We love getting creative in the kitchen to bring you new ideas to bake for a halloween party to impress your friends and family. We've made pumpkin cupcakes, cobweb cupcakes, rice Krispie pumpkins and smartie spiders. Pumpkin and Cobweb Cupcakes Ingredients (makes 6 of each) Cake: 250g self raising flour 30g cocoa powder 2 tsp baking powder 175g caster sugar 175g milk x2 eggs 100ml oil (we used vegetable) 85g chocolate chips 2 tsp vanilla Pumpkin topping 100g butter, softened 200g icing sugar Orange food colouring Green candy melts Cobweb toppings 4 large marshmallows Method Preheat the oven to 180C/160C fan and put 12 muffin cases into a cupcake tin. Sieve the flour, cocoa and baking powder into a bowl and the add all the other ingredients. Mix well until combined and no flour is visible. Evenly fill the muffin cases with the mixture and bake for 20minutes or until risen and a knife inserted comes out clean. Leave to cool whilst you make the toppings. To make the pumpkin cupcakes mix the butter with the icing sugar and a few drops of colour until smooth. Place in a piping bag and snip the end. Pipe a spiral on top of half the cakes. Melt the green candy melts in the microwave in 30 second blasts in the microwave. Place into a piping bag and pipe stalks onto a sheet of greaseproof. Once set, insert the stalks into the side of the orange icing to make the cakes resemble pumpkins. To make the cobweb cupcakes melt the marshmallows in the microwave for about 10 seconds. Use your fingers to stretch the melted marshmallow over the top of the cupcakes (it gets quite messy). If you get baking our halloween cupcakes this weekend we would love to see.
