{JANUARY RECIPE} 'NEW YEAR, NEW ME' CARROT CAKE ❤️

Can we come out yet? .... Is January DEFINITELY nearly over?? Get cracking with this DELICIOUS carrot cake, full of good intention... but finished off with delicious sugary nuts 💗   [gallery size="medium" link="none" columns="2" ids="355,353"] Ok, here goes.... Method 1. GREASE AND LINE 2 X MEDIUM SIZE (APPROX 20CM) CAKE TINS. PRE HEAT OVER TO 170C/ GAS MARK 3. 2. PLACE THE SUGAR, EGGS AND OIL IN A BOWL AND WHISK TOGETHER EITHER WITH AN ELECTRIC WHISK OR YOUR FREE STANDING MIXER 3. ADD THE FLOUR, BAKING POWDER AND SPICES INTO THE BOWL AND MIX TOGETHER UNTIL FULLY INCORPORATED. 4. ADD THE CARROTS, ORANGE ZEST, ORANGE JUICE (CAREFUL OF THE PIPS!) AND SULTANAS. GIVE IT A REALLY GOOD STIR AND MAKE SURE EVERYTHING IS WELL MIXED IN. 5. POUR THE MIXTURE INTO THE PREPARED TIN AND BAKE ON THE MIDDLE SHELF OF THE OVEN FOR 35-40 MINS, UNTIL IT IS WELL RISEN AND FEELS FIRM AND SPRINGY TO THE TOUCH WHEN PRESSED IN THE CENTRE. 6. TAKE OUT OF THE OVEN AND LEAVE TO COOL ON A WIRE RACK. 7. MAKE THE FROSTING BY SOFTENING THE BUTTER AND BEATING TOGETHER WITH THE CREAM CHEESE AND ICING SUGAR FOR 1-2 MINUTES UNTIL LIGHT AND FLUFFY.   8. TO MAKE THE CARROT STRIPS - PEEL YOUR CARROT INTO STRIPS AND LAY FLAT ON A BAKING TRAY, TURN THE OVEN OFF AND PLACE THEM ON THE MIDDLE SHELF WITH THE DOOR SLIGHTLY OPEN. LEAVE FOR ABOUT 10 MINUTES OR UNTIL THEY ARE COMPLETELY DRIED OUT. 9. MEANWHILE, PLACE YOUR SUGAR AND WATER IN A HEAVY BOTTOMED PAN OVER A HIGH HEAT AND BOIL UNTIL THE SUGAR IS FULLY DISSOLVED. CONTINUE TO BOIL UNTIL THE COLOUR STARTS TO CHANGE TO A RICH CARAMEL COLOUR (WATCH OVER IT, THIS CAN HAPPEN QUICKLY!) THEN TAKE OFF THE HEAT. 10. LEAVE THE CARAMEL FOR A FEW MINUTES TO THICKEN SLIGHTLY, THEN TAKE YOUR CARROT STRIPS AND DIP IN THE CARAMEL USING A PAIR OF TONGS OR A FORK. LAY EACH ONE ON YOUR GREASEPROOF PAPER TO SET. BE VERY CAREFUL WHEN DIPPING NOT TO GET ON YOUR FINGERS - THE CARAMEL WILL BE VERY HOT! - FOR THIS BIT, PUT SOME OLD NEWSPAPER ON THE FLOOR - IT WILL BE MESSY! - 11. PIERCE EACH HAZELNUT WITH A COCKTAIL STICK THEN DIP IN THE CARAMEL. REST ON THE EDGE OF THE SIDEBOARD OVER THE NEWSPAPER (FOR THE SUGAR TO DRIP ON). YOU WILL NEED TO USE A MUG OR SOMETHING HEAVY TO WEIGHT THE COCKTAIL STICK DOWN (SEE PIC) LEAVE TO SET FOR A GOOD 10 - 15 MINS. 12. NOW LAYER THE CAKE UP WITH THE CREAM CHEESE FROSTING IN THE MIDDLE AND ON THE TOP - PILE IT ALL ON AND DON'T WORRY IF SOME DRIPS DOWN THE EDGE. 13. DECORATE WITH YOUR CARROT STRIPS AND CANDIED HAZELNUTS, ADDING SOME SPRIGS OF ROSEMARY AND EXTRA ORANGE ZEST IF YOU WISH. 14. TAKE A PIC AND SHOW US ON INSTAGRAM TAGGING @BAKESBOX - THEN ENJOY! :)
