This Sunday is Father’s Day and here at Bakes we wanted to help you out with a special recipe you can whip up for your Dad. The Man Cake is the ultimate Sunday brunch treat which’ll keep your Dad sweet for another year. We’ve created two delicious variations of American Pancakes which we know you’ll love. You could either go for our Bacon, Cheese and Maple Syrup Pancakes or our Nutella filled Pancakes topped with Ice Cream and Strawberries. Can't decide? Make both, we won't tell! I don’t know what could possibly be more delicious. The pancakes are quick to whip up and take less then 10 minutes to cook. Then you just pile your toppings on and serve to your Dad! Ingredients Pancakes (makes x6) 135g self raising flour 1 tsp baking powder ½ tsp salt 2 tbsp caster sugar 130ml milk 1 large egg, lightly beaten 2 tbsp melted butter (allowed to cool slightly), plus extra for cooking Toppings Bacon, Cheese and Maple Syrup Pancakes Small packet of bacon 30g cheese 20ml maple syrup Nutella filled Pancakes topped with Strawberries and Ice Cream 1 jar of Nutella 100g fresh strawberries, chopped Vanilla Ice Cream Method To make the pancakes, sift the flour, baking powder and salt into a large bowl and add the caster sugar. In a separate bowl, lightly whisk together the milk and egg, then whisk in the melted butter. Pour the milk mix into the flour mixture and use a fork to beat until you have a smooth batter. Keep whisking until all the lumps have gone and then leave the batter to stand for a few minutes. Heat a little butter in a frying pan over a medium heat. When it's melted, add half a ladle of batter. *See additional instructions below if making the Nutella Filled Pancakes. It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen. Keep going until all the batter is used up. You can keep the pancakes in a warm oven until they are all ready. Toppings Bacon, Cheese and Maple Syrup Pancakes Grill the bacon until crispy. Layer in between and on top of the pancakes along with the cheese, and place the stack under the grill until the top layer of cheese has melted. Pour over the maple syrup and serve. Nutella filled Pancakes topped with Strawberries and Ice Cream *Once the pancake base seems to have cooked slightly, add a spoonful of Nutella into the middle of the pancake. Spoon a little more batter over the top of the Nutella to cover and leave to cook for another 2 minutes before flipping. Pile up your pancakes into a stack. Melt any remaining Nutella in a glass bowl over a pan of simmering water, being careful the water doesn’t touch the bottom of the bowl. Place a big scoop of ice cream on top of the pancake stack and arrange the strawberries around it. Drizzle over the Nutella before serving.
