Tomorrow, the 30th of July, is National Cheesecake Day! We couldn't resit the chance to share a recipe with you for our no-bake vanilla cheesecake. A very simple recipe with amazing results. It's totally indulgent and we'll leave it up to you to decide on your toppings. In true Bakes style we fully loaded ours with all our favourite things...Oreos, Maltesers, Popcorn Shed popcorn and caramel sauce. Ingredients: 150 g digestive biscuits 50 g light brown sugar 75 g butter, melted 500 g full-fat cream cheese 100 g icing sugar 1 tsp vanilla extract 200 ml double cream Toppings- we used Oreos, Maltesers, popcorn (from the Popcorn Shed) and caramel sauce Method: Line the bottom of a 23cm spring-form cake tin with greaseproof paper. Crush the digestive biscuits in a bowl using the end of a rolling pin and then stir in the brown sugar and melted butter. Pour into the tin and press down evenly with your hand. Place into the freezer until needed. In a large bowl, whisk together the cream cheese, icing sugar and vanilla until combined. Pour in the double cream and whisk until thick (this only takes a few seconds). Pour on top of the biscuit base and use a knife to spread until even. Place in the fridge for at least an hour to chill. Remove from the tin and place on a serving plate. Load with your favorite toppings, we used Oreos, Maltesers, popcorn and caramel sauce.
