Olympic Medal Cookies

With the Olympics drawing to a close, we wanted to share a recipe with you to make some amazing medal cookies. Team GB are nearly at the top of the medals table so we thought these would be a great treat to celebrate their achievements. These cookies are great for kids parties as prizes where they are doing something sporty. You can even get them to decorate their own medals. IMG_7261 IMG_7260 IMG_7262-1 Ingredients (makes x16) Cookies: 140g butter x2 tbsp golden syrup 100g soft brown sugar 1 tsp vanilla essence 350g plain flour 1/2 tsp bicarbonate of soda 1 tsp ginger, cinnamon or mixed spice 1 egg, beaten Decorations: 1 pack ready roll icing pink food colouring yellow food colouring 50g icing sugar silver balls and glitter ribbon Method Preheat the oven to 200C/180C fan and line two baking trays with greaseproof paper. Place the butter, golden syrup and brown sugar in a pan and heat until melted. Stir in the vanilla and set aside. Sieve the flour, bicarb and spice into a large bowl and stir in the butter mixture. Mix in the beaten egg and place the bowl in the fridge for 15 minutes. Flour a work surface and pour the dough onto it. Knead for a few seconds and then roll the dough to about 1cm thick. Use a large scone cutter to stamp out rounds and place these onto the baking trays. Use a lollipop stick to make a hole in the top of each cookie for the ribbons to go through later. Place the trays back in the fridge for 10 minutes before cooking for 12 minutes. You may need to use the lollipop stick to re-make the ribbon holes when they come out the oven. Leave to cool before decorating. Split the ready roll icing into two, and colour one half with pink and the other with yellow. Roll these out and stamp out 16 pink circles and 16 yellow stars. Place the icing sugar in a bowl and add a few drops of water until you make a thick, smooth icing. Use this as the 'glue' to stick the pink circle to the biscuit and the star to the circle. Use the lollipop stick to re-cut the ribbon hole. Decorate with the remaining icing, glitter and silver balls. Thread through the ribbons. IMG_7264 You can use these for any celebration and decorate them however you fancy.
