Tonights the night when the Olympic games will start, with the opening ceremony always being something to look forward to. This year the games are being held in Rio and we are backing the Brits to bring home some medals. To celebrate, we decided to bake some mini Olympic torches, made out of ice-cream cones, cake and butter icing. They are easy to make and the kids will love getting involved mixing the cake batter and decorating the torches with 'icing flames'. Ingredients (makes x10 cone cakes) Cake: 110g butter, softened 110g caster sugar 110g self raising flour x2 eggs x1 tsp baking powder x10 flat bottom ice-cream cones Decoration: 200g butter, softened 400g icing sugar x1 tsp orange food colouring x1 tsp orange edible glitter Method Preheat the oven to 180C and stand 10 ice-cream cones in a cupcake tin. Whisk together all the cake ingredients until pale and fluffy. Evenly spoon the mixture into the cones, they should be about 3/4 full. Bake for 20 minutes or until a knife inserted comes out clean. Remove from they tray and place on the table to cool. Meanwhile, make the icing by beating together the butter and icing sugar until smooth and light. Add a few drops of orange food colouring and beat well. Prepare your piping bag with a star nozzle and use a paintbrush to draw lines of food colouring on the inside of the bag, from the nozzle upwards. Place the icing into the bag and pipe stars on top of the cakes. Sprinkle with glitter to finish. Watch out for more of our Olympic inspired bakes over the next few weeks.
