Toasted S'mores CupcakesSep 19, 2016
The 19th-25th of September is National Cupcake Week and so we had to get involved by sharing a recipe for some amazing S'mores Cupcakes. These are rich and chocolatey and have a gooey centre surprise! We've used a blow touch to toast the marshmallows on the top but you could place them under the grill for a second (watching them carefully so the icing doesn't melt). Ingredients (makes x8 cupcakes) Cakes: 100g self raising flour 20g cocoa powder 140g sugar 40g butter, softened 1 egg, beaten 120ml milk 1 tsp vanilla Filling: 50g marshmallows Topping: 120g butter, softened 200g icing sugar 30g cocoa powder Handful of crushed biscuits, we used Malteasers Handful of marshmallows Method: Preheat the oven to 180C/160C fan and place 8 muffin cases into a cupcake tin. Make the cupcakes by mixing all the cake ingredients together until smooth. Pour into the cases until 3/4's full and bake for 25minutes or until a knife inserted comes out clean. Leave to cool. Make the butter cream by mixing the butter, icing sugar and cocoa in a bowl until smooth. Place in a piping bag with a star tip until needed. Once the cakes are cool, place the marshmallows for the filling in a glass bowl over a pan of just simmering water, being careful not to let the bottom of the bowl touch the water. Leave until melted. Meanwhile, use a small knife to cut a little cake out the middle of each cupcake. Fill the hole with the melted marshmallow. Pipe the buttercream in a swirl to cover the marshmallow and sprinkle over the crushed biscuits. Place a few marshmallows on top of each cake and toast using a blow torch or a preheated grill.
